Just received the Madagascar Vanilla beans I purchased through Ebay...

Shelf life significantly depends on how you keep your beans.

The beans from Vanilla Cafe come vacuum packed in plastic and would probably keep that way for a year or so.

Of course, if you want to USE them, the second air is introduced, they'll start to dry out. I keep mine in a zip-lock bag and even after they've dried out a bit, they'll work just fine flavoring sugar or cream.

 
I'm not sure, but my mother used to keep them in a container...

of sugar (large, 5-lb thing). Supposedly it repells bugs (although that reasoning escapes me, it works) and also flavors the sugar.

I remember because I accidentally through them out once and she was maaaaaaad. smileys/teeth.gif

 
I fill a jar with dark rum and pop a couple of beans into that....keeps for ever and so good! Also..

keep some in a jar of sugar. Such a fantastic bean the vanilla is.
