Lemon Banana Poppyseed muffins from Eva/Norway (Gail's Swap, 2002)

Ya, so obviously it takes me a while to test some recipes.
The muffins only have 2 TBL of oil in the entire batch, which is great for Low Fat.
However, they also have a cup of sugar, sooo...
What I'm saying is...don't get too excited that these are healthy.

2 Cups flour
1 C sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

1 egg
2 TBL vegetable oil
2 large bananas, mashed
3/4 C milk
zest and juice from 2 lemons (I used one big lemon)
1 tsp poppy seeds

Mash bananas, add milk, oil, lemon juice.

Mix dry ingredients. Rub in lemon zest. Add dry to wet and stir in poppy seeds.

Preheat oven to 430 degrees. Makes 12 cupcakes.

Lol, but how was the banana lemon combo?
 
They were actually quite good. I saved the 12 muffins for the library staff and ate the mini cake I made from the leftover batter. The texture is a tad...soft, but chewy, but it was good with coffee. Eva has in her notes that she tried 5 times before coming up with a lemony low fat muffin that she liked. I agree. I guess the banana replaces most of the fat. Just wish it used less sugar since I already put a lot of sugar in my coffee.

I was pleasantly surprised the high temperature worked so well.
