you will love when he describes the root celler---I think maybe in the Spring chapter

thanks. we have a butcher supply store here and I bet they have it. lots of recipes do not call

for it---what is the advantage to using it?

Not only is is a preservative but it'll prevent "cured" meats from turning gray. They'll stay pink.
