Okay, I cheated again. I use the imitation lobster chunks in the 8-oz package. I know that this sandwich would be better with the real thing but it is so very, very good, cheap and easy with the fake. This lobster salad is also great served atop a mixed green salad.
Lobster Rolls - adapted from Ina Garten
Makes 2-3 sandwiches
1/2 pound cooked fresh lobster meat, diced
4 Tbs mayonnaise
4 Tbs finely chopped celery
1 tsp chopped capers
4 Tbs melted butter (or more)
2-3 good quality plain white hot dog buns
Romaine leaves (or other greens)
Chop the lobster chunks into bite sized pieces. Mix with mayo, celery and capers. Refrigerate.
Heat griddle. Spread butter on all sides of hot dog buns, inside and out. Grill until lightly browned.
Serve with romaine leaves in bun and a mound of lobster salad.
***I make the recipe as written but you can add lemon juice, green onion, finely chopped red pepper, several drops of red pepper sauce
