I'm doing a service I developed for my previous church when we were also without a minister for Christmas services. I really enjoyed developing it so I'm really happy to be able to use it again. I hope people like it. I've always had a secret desire to be a minister, so I'm glad to have this opportunity.

 
Joanie, I can't say enough about how wonderful this porchetta was.

A couple good reasons it makes great party food:

1. You can season it in advance and keep it in the fridge for up to 3 days before cooking it off. (I did 36 hours)

2. It uses a pork shoulder, which is cheaper than tenderloin or chops.

3. Contrary to the recipe, I didn't trim the fat off and it stayed super moist.

4. If you have the time (or inclination) pan frying the polenta as this recipe suggests, makes a great appetizer but I prefer the pork sliced and served as an entree option. Delish.
