Looking for a recipe for what we call pub cheese. Sharp cheddar

I saw a recipe for pub cheese SOMEWHERE. I can't remember where, but I had...

...never heard of it prior to seeing that recipe.

If I find it I'll let you know.

Velvetta version: Pub Cheese

Ingredients
2 lbs. Velveeta Cheese
3.75 oz. jar creamy horseradish
1 C. + 2 T. mayonnaise

1. Melt the cheese in a heavy saucepan over medium low heat. Stir constantly so it doesn’t scorch.
2. Stir in the horseradish and mayonnaise. Mix well.
3. Pour into crocks and cool.

Serve with crackers, bagel chips, pita chips, or pretzels or spread on sandwiches. It’s also good stuffed in celery. Pictured above is a double batch

 
Cheddar Dijon Pub Cheese Spread

Cheddar Dijon Pub Cheese Spread
So many foods take time to prep for the holiday table but this one is fast and oh so wonderful! Serve with a variety of hearty crackers or pretzel rods.

1 – 8 ounce block sharp cheddar cheese,chopped into small chunks
1 stick butter, softened
1/2 cup freshly grated Parmesan cheese
1/4 cup Dijon grainy mustard
1/4 cup coarsely ground walnuts
2 cloves garlic/ smashed with paper removed

Place the cheddar cheese in the bowl of a food processor. Coarsely chop. Add the butter, Parmesan , mustard and nuts. Mix until well blended. Place in a small bowl , cover with plastic and chill. Set out 15 minutes before using to soften. Serves 10-14

Beer Cheese Soup (I know, I know, but it looks so good I had to share)

Ingredients
1/2 C butter
1 medium sized yellow onion, chopped
At least 1/2 C carrots, chopped (if you are a fan of peppers, you can use same amount of Red & Green Peppers instead of carrots & celery)
At least 1/2 C celery, chopped
1/2 C all-purpose flour
2 C chicken broth
1 12oz bottle of Mirror Pond Pale Ale
7oz extra-sharp Cheddar, shredded
7oz processed Swiss cheese, shredded
2 C half-and-half
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp Worcestershire sauce
1 lb smoked sausage (if desired)
1/2 tsp Tabasco, to taste (if desired)


Directions
Melt butter in a stockpot over medium heat. Add chopped onion, carrot, and celery. Saute until softened. Add flour. Cook for about 5 minutes, stirring often. Add chicken broth and beer. Heat until it comes to a boil. Slowly add cheese while stirring until just boiling and smooth. Add half-and-half, salt, dry mustard, and Worcestershire sauce. Reduce heat to low and cook until soup has thickened. Cut smoked sausage into 1/2-inch pieces and place in a saucepan. Saute sausage over medium heat until heated through. It will probably take about 5 to 7 minutes. Add sausage to the soup, transfer to a large serving bowl and serve hot. This recipe was provided by professional chefs and has been scaled down from a bulk recipe.

this one looks interesting, with the radishes added, in a pinch, I buy Merkt's cheese tub and add

a generous dollop or 2 of horseradish.

I love the one from Trader Joe's - this would be a good project to try to duplicate it.

It is a cream-cheese based one, though. So yummy! They have three flavors - Sharp, Jalapeno, and ??? I can't recall the third one.

I remember something about this too, with a best of bar food

and maybe a food show where somebody visited the bar. I remember downloading the menu to see what the ingredients were in pub cheese. I've searched everywhere and can't remember the name of the place.
