funny that you say that...I was wondering how long ago it was!! Is it possible that it was 14 years ago? All that knowledge gathered together for all the groups. It was really impressive, even now, I think. Cheers, and hoping that all is well with you!

For the carnitas one recipe bakes pork whole then shreds the other recipe shreds and bakes??

 
Not sure what others do but I simmer the meat until it's fork tender, as

in tender enough to shred, then place small chunks of it in a skillet in the oven and heat til it get's hot and a little crispy. You can shred it either before you put it in the oven, or after, or not at all and just serve the crispy chunks.

 
Perhaps others will pop in to share how they like to finish their carnitas in the oven. Sandra?

Sometimes I bake and shred and sometimes I shred and bake - other times I shred and deep fry, this gives it a really good flavour, but of course, more fat and calories!
