Made a cauliflower steak for the first time tonight. What an easy side that looks after itself. I

A favorite at our house too. Can be dressed up with romesco, chimichurri, tapenade, any 'salsa' type

toppings (walnut-caper, herb salsa verde, lemon salsa verde, black bean and corn, avocado-tomatillo, tomato salsa), basil pesto or cilantro pesto; guacamole; avocado cilantro cream; harissa; lentils; hummus; parmesan-dusted topped with marinara or a chunky bruschetta sauce. So many topping possibilities, or just serve plain.

Marg, that cherry tomato olive topping from the Herb-Crusted Flank Steak with Cherry Tomatoes and Olives recipe you and I've both made a few times is quite nice too with the cauliflower steaks or roasted cauliflower florets (recipe at the link).

Isn't it amazing what has happened to cauliflower? I love cauliflower mash sometimes

with celery root. Love it and use it all the time now in place of regular mashed spuds, which I prefer of course, but when trying to keep the weight off, a cauliflower mash or rice sure fills the need beautifully!

 
Agreed, Karen. I'm down 34 lbs. now since last year, and use

cauliflower all the time in place of potatoes/rice/pasta. It's a nice veg that stands up well to a variety of treatments and flavors.

 
I also love roasting a head of garlic until golden brown, then add some to the cauliflower

mash, along with fresh thyme and a little butter. So good!
