Made these Ricotta Cookies and they were wonderful.....

Thanks! I’m excited, but I must try to not let the first born ka get jealous. She’s a brushed nickel model, so special too. However, now I know where to get her lock knob replaced. He also fixed my 1970s Kmart all metal box fan I was going to toss. Very happy to save that from the landfill. It’s a better fan than the three I replaced it with.

Hard to find good repair technicians today.....you are very lucky to have one close by

Okay...I have a guest coming who loves ricotta, but I've read through the recipe and am confused on the SECRET ingredient?
I interpreted the secret ingredient in the "chocolate chip cookie" as being the Ricotta

Marilyn I have a fantastic recipe for a very old, at least 25 to 30 years old from Polly O Ricotta - for Pumpkin Cheese Pie that is in one of my books .... have made it many times....searched on line and cannot find the recipe....if you want it I can type it up tomorrow....it is actually Pumpkin Ricotta Pie

ooh...I see. She started with a CCC recipe and deviated from there. Got it now.

And I would love the Polly-O recipe. Sandy recently shared her lemon ricotta pancakes and I've been making those (BEST addition is using Trader Joe's dried wild blueberries rather than fresh/frozen/freeze dried.

Polly-O Ricotta Recipe

Pumpkin Cheese Pie
2 cups all purpose sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
2/3 cup Butter
2 tablespoons cognac or rum
4 tablespoons water

Filling:
1/8 teaspoon salt
2/3 cup sugar
2 teaspoons pumpkin pie spice
2 eggs, lightly beaten
1 container (15 ounces ) Polly-O Ricotta
1-1/2 cups mashed cooked pumpkin, fresh or canned

Preheat oven to 450 Degrees F. Sift together flour, baking powder, salt and sugar. Cut in butter until mixture has fine, even crumbs. Add cognac and 4 tablespoons water, and work into soft dough. Turn onto lightly floured surface and knead gently 1/2 minute. Divide dough in half. Roll half of dough out about 1/4 inch thick and line a 9-inch pie plate, leaving about 1-inch overhang. Roll out other half of the dough about 1/4-inch thick and cut into 1/2 inch strips; reserve to use for lattice top. Sift salt, sugar and pumpkin spice together . Stir into eggs. Add ricotta and pumpkin and pour into prepared pie pan. Criss-cross lattice strips over top. Roll bottom over-hang up over strips and flute. Bake 10 minutes, reduce temperature to 325 Degrees F. and bake 45 minutes longer, or until knife inserted in center comes out clean.Cool in the oven.

Serves 8
Recipe From: 1987 Edition Famous Brands Cookbook, edited by Ruth Cavin

my addition I also added some black pepper and cardamom.....the ricotta I use is BelGioioso Ricotta con Latte as Number 1 choice or Galbani Whole Milk Ricotta as second choice
This is a wonderful recipe.....Enjoy

Thank you, Gay! Once upon a time I had a 3 lb container of Galbani ricotta that I froze in portions so I would always have it available.

It did not work. Once thawed, it was gritty…and not in a good way.

I’ve got plans for the first few days she’s here, but then we’ll be hanging around home. This sounds like a good project.

(Biltmore and Dupont Forest are two of my plans)
