Do you mean to say you've never been accosted by a toothpick-wielding

fast-food mall employee with a tray of Bourbon chicken nuggets, strategically designed to lull you into ordering a plateful of them and shutting down every artery in your body?

Need I add that I never pass up a sample.

 
I don't know, I do know it tasted a lot like Soy-Simmered Chicken

that I make with a whole chicken. I am going to try this again, and cook it for the time indicated and see how it turns out. It would be lower in fat then the other recipe which is always nice.

 
golly, nope. But I remember seeing something like this in the food court in Ala Moana Mall in HNL.

 
I'd be interested to know how it turns out. I read all 680 reviews, and I found 2 that

said the breast meat was dry. (OK, I read a few pages of them.) I'm intrigued. In my experience, white meat becomes dry and stringy if it's simmered too long, but so many on recipezaar like it as is.

I didn't realize this was a mall classic that has to be served in small chunks, so I guess whole pieces are out.

 
I know, that is what is botherring me...

like I said about the pork loin, I would have never thought it would be tender, but it was. I didn't read through all of the reviews either, but there are so many, and most of them are positive. I will let you know what I find out.

 
Dawn, didn't you mention having some chix thighs that were tough? Perhaps your source for

chicken isn't consistent in quality. I've gotten bone-in, skin-on breasts that were tough and I don't think it was due to the cooking method. I do a Chinese chicken and pepper stirfry, and the chicken (1/2-3/4 inch cubes) is only cooked for 3 minutes, but it usually comes out tender. There are exceptions, though, and I do think it has to do with either quality of the chicken or the processing in some way.
