Making Duchess Potatoes Ahead of Time

Hi There,

I have 8 to dinner on Thursday and I thought I would these tomorrow:

My question: Can I make them tomorrow (Wed.) and refrigerate them and then bake-off before the company comes. AND (what I'd really like to do) can I bake them tomorrow and just reheat them?

I'm guessing the answer is yes to both but I'd appreciate confirmation.

BTW - I saw that I posted a recipe for Duchess Potatoes in 2009 (link doesn't work now) - LOL
 
I make several versions of Duchesse potatoes, often; I love potatoes. My fear would be that their surfaces dry out and then become like sheets of paper. (it seems so vivid that I must have tried this) If you could keep them very closely covered and then just prior to baking, dot them with a tiny bit of butter, that might work. But I think, ideally, freeze them shaped but uncooked. No surface treatment, then after just a little thawing, brush with egg wash and bake. But don't let them sit around on the counter for even an hour; bake them half-frozen. In fact, I am wondering if freezing would help them anyway, just to retain their shape as they are brushed.

hmmm...must try freezing them next time

ATK says they can be made up to 24 hours ahead of time. They have a unique technique when adding the butter. Good luck Deb!
They also have a Duchess potato casserole style with a striated top that looks fancy too. Gets rave reviews. LMK if you'd like that recipe too. :)

I think I ended up dreaming about them. I always found it frustrating to brush them and still have them keep their shapes. The shape is critical....why bother if no shape? I should have thought of freezing them a bit. Must try soon. Hope yours turn out perfectly, however created.
