I had similar issues with baking cookies, I've discovered that I can't bake two pans at once, even if I move them around during baking. Just something about my oven.

 
ANd now that we are talking about it, banana bread tends to have a lot as well.

So much for feeling virtuous about having fruit and/or veggie breads.
