Thanks Meryl. I don't use dark non-stick pans, but I will try doubling them

for baking.

I had similar issues with baking cookies, I've discovered that I can't bake two pans at once, even if I move them around during baking. Just something about my oven.

I've noticed that, too. Same thing with most zucchini bread recipes.

ANd now that we are talking about it, banana bread tends to have a lot as well.

So much for feeling virtuous about having fruit and/or veggie breads.
