posted above, and surprisingly enough, I've trashed it. (I am a bad pack rat so thought I might find it still kicking around, but no such luck.)

I did, however, find my day-by-day work schedule for the 6/26/08 Sunday Brunch I catered for 70 people (posted in Menus at #42 on 7/5/08) so if you have any sort of urge to make that menu, let me know, & I'll scan & send you a copy of that detailed work list--it's pretty messy with egg spills and chocolate smudges, but is still legible. (Thought you'd get a laugh out of this offer as I'm chuckling here.) wigs aka Caryn

 
Aw, bless you...but if for some reason 70 people are coming to my house

for brunch, there will be one item on my list---and one item only:

1. Buy plane ticket for wigs. STAT!

Joe, I would really need to clean it up a bit first, and I don't mean just from the splatters! One

margin is full of notes I took at a doctor's appointment! I will work on this. Shouldn't take me too long.

 
Gee, thanks! You've made my day! However, I'm sure that by the time I arrived at

your place, you'd have everything under control and I would merely need to work as the sub-cook under your supervision.

1) Make & freeze 2 Spinach-Gruyere quiches.
2) Make 2 homemade angel food cakes from Carole Walters' GREAT CAKES (for Trifles).
3) Make 2 recipes Overnight Danish Braids.

Monday, June 23, 2008
1) Touch base with hired servers confirming date, time, address of party, etc.
2) Make Cappuccino Brownies.
3) Make 72 small dinner rolls for turkey sands.
4) Buy turkey.
5) Compile packing list.
6) Make cranberry chutney sauce.

Tues, June 24, 2008
1) Collect 45 clear cof cups in basement & pack.
2) Make 2 rec Basic Veg. Dip (minus fresh herbs).
3) Make 4 rec salad dressing.
4) Make 1.5 recs miniature caramel-pecan sticky buns.
5) Roast turkey.
6) Toast slivered almonds.

Wed, June 25, 2008
1) Thaw cranberry chutney in refrigerator.
2) Make 3 salmon quiche crusts & freeze.
3) Slice cooked turkey.

Thursday, June 26, 2008
1) Drain mandarin oranges.
2) Thaw concentrates and mix punch ingredients for base + add juice drained from mandarins.
3) Buy veggies for crudites platter + all fruit & vegs to be used for garnish. (See grocery list.)
4) Make glaze for Danish braids.

Friday, June 27, 2008
1) Slice lemons, oranges, & limes (2mm) for garnish in punch pitchers and stemmed glass goblets.
2) Chop and add 1/2 cup basil to veg. dip.
3) Hollow out acorn squash to use as container for veg dip.
4) Thaw sliced turkey.
5) Chop celery & scallions.
6) Clean greens to be used for garnish (kale, bok choy, etc.).
7) Prepare veggies for blanching--clean & make florets.

0) 4 pkgs Philadelphia cream cheese at room temp.
1) Gather fresh herbs from garden & condition.
2) Thaw miniature sticky buns & Danish Braids.
3) Thaw brownies, 2 Angel foods, & mini dinner rolls.
4) Pick up all rental dishes and silverware and transport to client's home BEFORE 10 AM along w/ 2 lg bags of ice.
5) Blanch veggies/ice water bath/drain well/pat dry. Store in paper-towel lined Tupperware.
6) Assemble Turkey sandwiches & wrap individ. w/ Saran.
7) Start packing station wagon after rental del.

9) Mix salad greens. (Hold dressing, oranges & slivers.)
10) Catch up any incomplete tasks from prior days.

Sunday, June 29, 2008
1) Make crudite platter in spoke fashion per diagram with acorn squash in center. Line tray w/ kale.
2) 3 Salmon Quiches need to be in oven by 7 AM! 400 deg--35-40 minutes.
3) Rewarm Braids, cool, drizzle glaze & stud w/ maraschino cherry halves.
4) Rewarm Spinach quiches, 350, 20 min.
5) Pick pansies, violas, day liles, roses & pack in cooler along with herbs to be used for garnish.
6) Slice brownies & garnish ea w/ choc-covered cof. bean.

8:30 AM Arrive on site==>
--Unload car.
--Fold cloth napkins & put in blue basket w/ handles.
--Boil water to heat cof carafes.
--Unpack rental dishes, cups, goblets & silverware.
--Put clear cups & stemmed goblets in kitchen.
--Set up tray jacks, trays, tray cloth covers.
--Preheat oven to 350.
--Set up warming trays in DR on sideboard.
--Warm Spinach quiche if no time at home.
--Put ice in bucket. At 10:30 AM ice down goblets
--Warm sticky rolls.
--Arrange and garnish all food on designated serving pieces--see diagrams.
--Drain pickled corn spears & add to crudite platter & arrange 4-colors of sliced bells atop.
--Toss salad ingredients w/ dressing.
--Arrange food on DR table and sideboard warmers per diagram.
