My chives are back so it's time for Steve's Potato Chive Cakes!

I am cooking for 2, so I greatly reduce the amounts in his original. I'm using one large Russet potato, 6 cloves of caramelized garlic, fistful of chives, 1 egg, and enough cheese (you decide).

Steve2. Would you please share your recipe for your "Potato Chive Cakes"

I love the idea of freezing some. Would make great snacks for grandkids, I think. TIA.

I'm doing Pommes Anna on Saturday, so this gives me an idea to add chives to it. Lots of chives here too. I think they will work better than the addition of onions I did once, since they won't contribute a lot of moisture.
