he's home this afternoon. head not exploding anymore. still needs lots of quiet and rest.

kinda tough medicine with a 2 year old in the house!

 
yes freeze with lids off but still leave extra space on top---I believe It was exploding stock that

happened in my freezer. not as bad as the spaghetti sauce--oh my what a mess.

 
In a bind you can use screw on caps but be sure to get everything to room temp first. Also ........

after processing, make sure the caps or lids flatten or even suck in. This means a vacuum seal has been established in the jar and the contents will keep for some time.

Conversely,if the lids remain domed, either start again, replace with new lids/seals or eat soon.

 
One time I froze water bathed jars and they didn't explode. I don't

know if it was because of the vacuum seal? I have been afraid to try it again. Ang is right about still leaving headspace though.
