My Saturday Six

omg. I loooove those chocolate pomegranate thingies!!! Dark chocolate covered pom jelly things...

It's in a standup bag, by the nuts and candies and stuff. A pom gumdrop-like middle, coated in a thick dark chocolate coating.

That big bag is waay too dangerous - I'll sit there and eat way toooo much. I stopped myself from buying it on the last trip, but now you got me dreaming about it...

Sorry about the atm, Pat.

Keep your spirits up, Pat---you shouldn't be out any money

The ATM and camera records will show that you did not get the cash, so there should not be a deduction from your account.

My Weekend Six

1) Had home baked waffels for breakfast with tea and freshly squeezed orange juice. A perfect triangle of breakfast foods.

2) Had a friend coming for dinner Saturday night. I derved lamb roast with thyme baked potatoes, baked carrot sticks and red wine sauce.

3) I made pumpkin pie for dessert. I served it with vanilla ice cream.

4) Wine. There was wine involved, and plenty of it.

5) I feel like baking biscotti today. If I take the dogs out to the woods and walk for an hour, it will even out the biscotti calories, right?

6) I'm at page 350 in the Stalin biography. It's really interesting, but I have to say, that man was EVIL!

My Sunday Six

1. Had guests over yesterday that only stayed for an hour. I had to clean the house as if they were spending the night and the result; a day off today to do whatever I want; yay!

2. We are finishing up the cinnamon scones and everyone just loves them.

3. I am on one of the cooking streaks where everything I cook comes out great and all the new recipes I try are really good. I just love that when that happens.

4. I must have thought I was out of butter the last few visits to the grocery store because my freezer and fridge are inundated with butter. I will be baking today.

5. I am so in the mood for the holidays this year.
I want to do lots of cookie and candy making.

6. My stepdaughter is sick with a sore throat and such so I think I know what I am going to do with that whole chicken in the fridge. I think of Moyn everytime I make chicken soup. smileys/smile.gif

I need to try a couple of new ideas - meals, not desserts - what have you tried

that came out good? I need to get inspired!

I suspect that is a security feature of the machine, and you won't be out anything once the machine

is inventoried.

Have you checked your account balance? I'm sure by Monday, it will be adjusted. If not, a quick trip oughta straighten things out. You can tell them to contact the person who's transaction followed yours as a witness. smileys/smile.gif

My Weekend Six

No cooking lesson for Ian as I am up to my eyeballs in Christmas Prep.

Shopped for baking & cooking ingredients.

Made enough filling for 7 tourtieres and they are reposing in the freezer. Was going to make 2 actual pies to freeze but making the filling was enough work for one day.

This morning I made and froze "Death By Chocolate". Wow! The recipe was posted separately.

Getting ready to make dough for Lesley's Pecan Shortbread with Valrhona Chunks. Dough can be frozen and cookies baked as needed.

http://lesleystowe.com/lesleys-pecan-shortbread-with-valrhona-chunks/

Edit: After mixing the dough I found it too soft and buttery so I added another cup of flour.
I baked a small batch of these and they're great.

Will bake my regular Scottish shortbread this afternoon.

Have no idea what we'll have for tonight's dinner......sausages? steak? something quick and easy for sure.

I have been making some old ones and some new ones.

I made the Soy Simmered Chicken and everyone raved. It had been awhile since I made it.

The Ginger Scallion Sauce that Heather posted was wonderful on noodles, but I am going to try it with chicken and shrimp. It is just so flavorful and using my little mini chopper makes mincing the ginger easy.

I made a broccoli/cauliflower salad that was gone in two days.

I made some garlic olives for a platter on TDay, and yesterday added some artichokes to them and coarsely chopped them into a tapanade and will mix the leftover tapanade into some cream cheese today for spread while we watch football.

Linguini with clam sauce. I made white this time and it was really good. I love the red clam sauce too.

Chicken and dumplings (Bisquick recipe).
King Ranch Casserole
Feta Scallops Pasta
Shrimp Butter
Minestrone
Turkey Breast (cooked at 450 degrees, so moist)
Stuffed Shells

I have been trying out some appetizers because we have a xmas eve appetizer bash. Let me know if you want any of the recipes and I will post them or link them for you.

Sunday Six

1. Attempting to make gingerbread today...

2. Husband is off to Prague for two weeks, which means I get to eat bacon, lots of garlic, and spicy tacos. smileys/wink.gif

3. Did a low-key Thanksgiving: stuffed turkey breast, mashed potatoes, green beans, cranberry sauce, rolls. No stuffing. smileys/frown.gif Or gravy!

4. What to do with all that leftover canned cranberry sauce? Coffeecake?

5. NFRC: Every time I marvel that it's so warm in New York in November, I remember that it's the same latitude as Spain.

6. I resisted buying a Wilton cookie press, this weekend. Anyone have one (of the new ones)? It took a lot of willpower to just put it down and walk away!

Erin, for your canned cranberry sauce.... Judy's famous ribs

These are always delicious. I am sure you can use the cranberry marinade with chops or chicken.

Below is her recipe, but when I make it, I dramatically reduce the amount of salt. It is a very forgiving recipe in that you can just do step 1&2 or 1&3. Very good flavors. Generally, I am not a fan of precooking ribs, but the spices in the water really add some nice dimension. Hope you enjoy it as much as we do!
Regards, Barb

STEP 1
5 lbs. spareribs (pork)
1 onion, studded with cloves
1 tsp. each rosemary, thyme, marjoram, and oregano
Cut the spareribs into serving pieces. Cover with salted water and add the onion and herbs. Bring to a boil, reduce the heat and simmer until just tender, about 50 minutes. Drain.

STEP 2
1 can cranberry jelly or sauce (I use sauce)
8 oz. ketchup
8 tbs. soy sauce (150 ml)
3 tbs. salt (I leave out...)
7 tbs. sugar (2/3 c.)
4 tbs. garlic powder (1/4 c.)
Marinate the ribs in this mixture for 12 hours or longer. Barbecue for 30 minutes or bake in the oven at 325F for 50 minutes. (Since you have pre-cooked the ribs, you won't need 30 minutes on the barbecue).

STEP 3
1 c. dry red wine
1/3 c. tomato ketchup or chili sauce
1 tbs. soy sauce
2 tbsp. honey
1 tsp. minced garlic
Blend all ingredients together. Use either as a marinade or as a barbecue sauce when you are grilling. (I use it as a barbecue sauce).

baked off last of the choc. chip/oatmeal cookies and delivered them to our Thanksgiving hostess along with the remaining cranberry/pineapple sauce she covets

One of my favorite ways to use leftover cranberry sauce is to make

a meatloaf, add some lemon juice to the cranberry sauce and spread on top of the meatloaf. Bake until done. YUM!
