I love afternoon tea as many of you know. It's a custom I am doing my part to bring back.

 
Here's the puffs recipe for you...no, I'm not in the pics (I try to stay behind the camera)

The reason we weren't so keen on this recipe (although the flavor was very good) is that it browned way too fast on top and didnt get done underneath. I think the puff pastry was too thick although they don't say to spread it thinner.

Cheese Puffs

Yield: Serves 12Prep Time: 10 minsCook Time: 20 mins
Ingredients:

1 Package (1.1 Pound) Puff Pastry (I Used Pepperidge Farms)
5 Large Eggs
10 Ounces Grated Mixed Cheese (See Notes Above)

Directions:

Preheat oven to 400 degrees F.
Line a baking sheet with parchment paper, and unfold the pastry laying it side by side onto the prepared sheet, overlapping by i-inch.
Use your fingers or a rolling pin to flatten the joined area, then turn over the edges and corners to form a ridge pinching with your fingers to secure creating a rectangle about 14 x 10 inches.
In a small bowl, beat 4 of the eggs, and add the cheese.
Stir to mix, then pour over the pastry spreading evenly to cover the entire bottom.
Beat the remaining egg and lightly brush over the edges.
Bake for 20 minutes, or until very golden brown. (If the filling puffs up as it cooks, simply pierce with a knife in a few places.
Cool for 10 minutes then cut into pieces and serve.

Even with 95 deg heat, most everyone still had hot tea...we were amazed!

We brewed Earl Grey in the pots but had hot water and a tea selection on the side table.

We try to do this every 6 months, then we plan all the food for Christmas tea that serves 450 ladies. Little food is just the best!

 
I had never had one before...seems like it would've been a depression-era thing?

The cherry one we made was drop-dead fabulous! I've also seen a recipe for apple ones. YUM!

 
Yes, it is simple and would do well with added toppings - just like breakfast pizza smileys/smile.gif

 
I don't know if it was depression-era, but my Mom's had apples in it and it was to die for -

especially à la mode!
