Need some of the expert advice here on making a wedding cake and frosting...

RLB's Dreamy Creamy White Chocolate Frosting

from Rose's Heavenly Cakes

9 oz white chocolate (with cocoa butter,such as Green & Black's or Valrhona)
12 oz Cheese cheese
3 oz (6 TBL) unsalted butter, soft
1.5 TBL cream fraiche or sour cream

Melt white chocolate until mostly melted, remove from heat and stir with silicon spatula to fully melt.

Use food process to blend cream cheese, butter and cream fraiche. Add melted chocolate.

Makes 2 3/4 Cups of frosting
