Nibble advice, please

Oops, I just saw this. The version of Julia I have calls for just one cup of the court bouillon...

for a pound of mushrooms. I've accidentally used the full 2 cups, and the lemon flavor was a bit strong. People still ate them and asked for the recipe, but I think they're better balanced with just the one cup of bouillon. I freeze the second cup so I can whip up another pound of mushrooms later.

Also, since the mushrooms release so much liquid of their own, it takes a long time to boil down the cooking liquid if you use two cups.
