Hi. I've been making this banana bread for years, but it's been a few months. Today when I made it I felt like there wasn't enough batter for 2 9X5 loaf pans (what the recipe indicates). I decided to use 2 8.5X4.5 pans instead.I double checked all my ingredients and I know I didn't leave anything out. Even with this modification, the loaves were not that thick. The batter didn't even fill the pans halfway. Now that I had this experience today, I'm remembering that it has happened before.

I just wondered if this happened to anyone else. How full should the loaf pan be to get a nice full loaf when it is done baking? Maybe I should double the recipe next time?

It's delicious, of course, which is why I want the loaf to be taller!

 
Hi Therese, check the recipe...There was a version that had a typo re: BP and Baking Soda...It was

fixed quickly, but I had a similiar problem once. I believe the one listed in T&T is accurate....
Just a thought..

If you compare the recipe as it appears in the T & T section to others,

that amount of ingredients yields one 9" loaf.
