Submerge a whole chicken breast with its skin and bone intact in lightly seasoned water that has

been brought to a boil. Turn off the heat, put a lid on pot and let sit covered for 2 hours. The result - tender, moist and perfectly cooked chicken breast.

- OR -

Simmer chicken breasts for 6 minutes in lightly salted water, uncovered - then let sit in water for 15 minutes, covered.
