Ok, thanksgiving party of pandemic one recipe ideas?

I will make my usual full-on TDay dinner but just smaller

It will be just DH and me but there is nothing in the world that we love more than Thanksgiving dinner leftovers. So as per our traditional menu I will make a small turkey, a half pan of dressing, mashed potatoes for 8, gravy and homemade green bean casserole. May not make dessert. We'll happily munch on leftovers for several days. Can't wait! And I'll have a nice turkey carcass for my "bone bag" in the freezer.

 
Nice, easy recipes here and thanks for posting. I am going to make the dressing, they call it

stuffing, for the two of us. I have some tweaks already typed into the recipe. It won't be the same without our family, but they are in the same boat. We will not have any kids here and they will not have grandma and grandpa, so we will make it the best day we can.

 
Great idea, and that is exactly how I do my cooking. I cook a lot of food on Saturday

we get leftovers for dinner Sunday and Monday. The rest gets repurposed for lunches. During the week, we keep it very easy and simple, yet healthy and delicious. Tonight it is bacon and garden tomatoes, and garden lettuce sandwiches, on homemade sourdough with whole roasted garlic cloves in the bread. I plan on using Stonewall Kitchen Roasted Garlic and Onion Jam on the bread. I think it will be great. A nice small bowl of homemade tomato soup should do us just fine on this rainy (finally) Friday.

 
I would really add some celery and a little onion to that recipe even though it has

shallots. Can't imagine stuffing without sage and a lot of it!!.. I never add egg to stuffing personally. And up the parsley.

Well, as we are ordering our turkey and a few sides from a restaurant for our actual dinner I floated the idea to our kids that I could cook a turkey and distribute for leftovers--and that way could have the stuffing IN the bird--I have takers for leftovers so will do a small bird (usually do 20# plus) and all will be well for stuffing and gravy. I'm a happy camper!!
