Ok, today is a special day for me and I feel like cooking for the family, Roast Pork Belly BUT....

with 4 hours needed to cook, 3 hours needed to rest (and chill) and then the last hour of cooking...HA!!!!! guess what...the trials of living in the sticks....POWER WENT OUT at 10.30 am ....I heared it is a cable problem at 1pm so decided to start a fire and carry on with indirect cooking.....well the fire had just been lit when back comes the power...

SO....I HOPE the meat has not gone off....I am leaving it in the oven ...to reheat/start cooking again...and also keeping the fire going so if the damn power goes out again I'll just transfer the dish to the fire.....

OH BOY.

I haven't cooked for months now with all the traveling I've been doing and really wanted to do a special dinner....SOOOO Murphy's law.

 
Joanie, if anyone can beat those odds, you can... I know of no one else who would start a fire after

the power went out. My friends would all just hunt for the takeout menus. smileys/wink.gif

I'm sure dinner will be fab!

 
Thank you for the boost Erin, birthdays come and they go but not every one gets to.....

have a showdown with the local electricity department to at least get a few hours of that all important power. It has come back and so the pork belly is almost done. (Al be it with a rather nice vague smoky flavour, which I think it an interesting tweak!)
I have put it aside to cool with the weights on it and although it wont be chilled I'll carry on with the recipe.
I will leave the pork shoulder in until the last min. and too bad if it is a bit tough.
