Ok, we've survived Thanksgiving (more or less).... what is everyone baking for Christmas?

Two Christmas Puds are in the freezer and two more will be steamed today. On Saturday I

prepared cookie dough for Triple Chocolate Cranberry Cookies. I froze the dough in cookie sized bites so they will be ready for baking when I need them. Today the shortbread will be done. On my list for baking are:
Vanilla Almond Crescents
Florentine Bars
Judy's Nut Ball Cookies
I'm sure I'll make something else as well.

 
Great idea about the freezer, Sylvia. I think I'll make my Russian Rocks and Chocolate Crinkles

doughs and roll and freeze this week. Wish it were possible for the candies. AARRGH

 
Maybe just some orange zest? Or a few drops of orange oil,

Or leave it out entirely. The truffles might be firmer without the liqueur, but there's no harm in that. (I just finished cleaning my hands, the counters, the floor, and especially the refrigerator door handles of gooey chocolate gunk.)

 
I think it might be too sweet, but it might be worth a try. Maybe if you made a batch of the

chocolate mixture and then tried additions in small amounts of it?

 
I usually freeze them, but I would say a couple weeks in the fridge. They do melt easily

in a warm room, so recipients should be cautioned to keep them chilled.

 
Frozen truffles?! Perfect -- I can freeze them before I pop them in the gift baskets. Thanks!

 
I make so many at one time that I can't store them any other way. I roll them on a plate of cocoa,

put the plate in the freezer when it's full, then start another. Once they're frozen they can be piled into a container, otherwise they're too gooey to stack up.

For serving, they defrost quickly on a plate at room temperature, and may need a cocoa touch-up.

 
I've seen lots without cream.The one I use by Ghirardelli has both, but more butter than cream.

 
On the agenda: Tara's Peanut Candy Cookie

A cousin made this up and I just couldn't stop eating it... she didn't know what to call it, and whether it should be a candy or cookie, hence the name.

Tara's Peanut Candy Cookie

2 lbs. white chocolate, chopped
2 cups peanut butter

Melt the chocolate and pb together then add:

2 cups salted peanuts
2 cups mini marshmallows
2 cups rice krispies

Stir carefully until cereal and peanuts are well coated then drop by large spoonsful onto waxed paper.
