Just turkey-feta meatballs here, Buffalo chicken dip, and guacamole. Just having DS's friends over... nothing fancy. (Giants, of course!)

"The Chew" had a lot of good apps on there today though!

 
I'm opting for more healthy fare, so Cowboy Caviar, baked hot wings, roasted chickpeas,

and some sliced mozzarella/proscuitto rolls. this is for DH to pack up and take to work to share with those on duty. I might still make the spinach dip, but not sure if they want a dip. I want to try it with greek yogurt for the sour cream, so I'll probably mix some up anyway---if I can find the Leek soup.

I decided to give Ruth Reichl's "favorite chili" recipe (from the Gilt-Taste web page) a try

While I prefer green chili to red, it IS Ruthie R. so how far off could she steer me? Cooked it today with repeated tastings and it does not suck . . . as yet.

On Sunday, we'll have that with with serrano-cheddar-bacon corn muffins and the usual chili works. (Sour cream, shredded cheese, pickled jalapeños, salsa, chopped onions and "cheeps".)

Follow up with the NY Times version of Jacques Torres' chocolate chip cookies and chase everything with jalapeño margaritas until we can't see straight. Not exactly cutting edge but certainly good, GOOD times.

Buffalo chicken sandwiches, hummus, 1/2 batch Auntie Ann's pretzels.
Made the crack bread 2 weeks ago for Giants game, thought the photo looked way better than it tasted. When you add up the $$ it takes to make it, not a lot of bang for the buck. IMHO.
Curious to see others thoughts on it.

Okay so I have just added chili and Steve's bacon muffins (or a close fascimile of them!)

I can't have a bunch of boys over without serving chili. The dips and tortillas will be for us :0)

 
Here you go. This is as close to a recipe as I can come, I frequently "vamp".

Serrano-Cheddar-Bacon Corn Muffins
Makes 10-12 muffins.

1¼ cups ALL-PURPOSE FLOUR
¾ cup YELLOW CORNMEAL
¼ cup SUGAR
1 Tbsp BAKING POWDER
½ tsp SALT

¼ cup MILK
½ cup PLAIN YOGURT
½ cup VEGETABLE OIL
2 EGGS, slightly beaten
2 Tbsp HONEY
½ cup shredded SHARP CHEDDAR CHEESE
4 rashers BACON, diced, fried crisp, fat reserved.
1-2 SERRANO PEPPERS, seeded, deveined, finely minced

Preheat oven to 400º F. Prepare muffin tin by greasing the cups with the reserved renderings from the bacon.

In large bowl, stir together flour, cornmeal, sugar, baking powder and salt. In another bowl, stir together milk, yogurt, oil, eggs and honey until well blended. Make a well in the dry ingredients and add milk mixture, stirring until combined. Fold in cheddar, bacon and serranos. DO NOT OVER MIX.

Spoon batter into prepared muffin cups; bake 18 minutes or until a toothpick inserted in muffin comes out clean.

Cool 5 minutes before removing from muffin tin and cooling on a wire rack.

 
Thanks Steve! Sounds great. On a side note, I just made a batch of cupcakes

(from a mix, I'm not a baker) and followed the instructions to a "T". Mix until light and airy, the directions said. I mixed and mixed with an electric mixer and nothing seemed to look "airy", so I mixed for about 3 minutes.

Toughest cupcakes I ever had. Texture of sourdough! Wish me luck with yours! You say do not overmix - I won't! ;o)
