Okay, what's for dinner tonight?

Thawed chicken-broccoli-cheese casserole from the freezer and tomato/basil salad here

Hot, spiced cider and Brown 'n' Serve rolls, too, and maybe chocolate-chip cookies for dessert.

 
Rainbow trout filets with a lemon/wine/garlic/herb/butter sauce, brown rice, & roasted broccoli

 
revisting the T&Tarchives---grilled swordfish with Jimmy Williams fish baste

stringbeans and red quinoa

 
Spaghetti with meatballs, garlic bread and green salad.

I tried prepping my sauce last night, then putting in the crockpot today for a long simmer, Hopefully it turns out well!

fund raiser chili cookoff tonight while watching game 1 of the Series with our gang from the summer

college league we support. always fun, but the chili entries can get a bit strange. Bill usually makes some up with moose. I made a big batch of that popcorn mix with York bits(blue and white for the team colors) and candy corn and peanuts. filled blue plastic cups with the mix to serve during the game. fun.

 
Buffalo Bites. I've made it before years ago and it was very good, but this time,

I'm using Traca's Asian soup method of coating some cubes of chicken breasts (which I got a great deal on) and stir frying and then coating with Texas Pete's hot sauce and dipped into my favorite Hidden Valley's Fat Free Ranch dressing.

How's that for low fat?

Will have my favorite store-bought Sweet Bay's packaged cole slaw as my side. Um, not so low fat...

about 5 oz home-canned tuna. . .

drained, canned with nothing but tuna and a small amount of olive oil, some baguette from TJ's and some olive oil doctored with black pepper, chipotle pepper and just a little salt, and some grapes.

I wuz batch'n it--significant other out refereeing.

The tuna was really good with the bread and oil!

 
Enchiladas made for a pint of mole I found in the freezer, stale frozen tortillas, queso fresco and

onion. I'm really trying to clear out the freezer!
