I used my own latke recipe, but the King Arthur secret is this;
Pour just enough vegetable oil (Peanut oil is best) to cover the bottom of the pan, so that when you tilt the pan the oil moves. Portion out the latke batter and press flat. Bake at 400 degrees for around 20 minutes per side or until crisp. I actually used convection at 400 for the last 5 minutes to make them really crispy
