OVEN-BAKED DRUMSTICKS
From Bon Appetit, 6/96. Serves 12.
3 cups fresh while breadcrumbs
1 cup freshly grated Parmesan cheese (about 3 oz.)
6 tbs. chopped fresh parsley
4 tsp. onion powder
1 tbs. Hungarian sweet paprika
1 tbs. dried oregano
2 tsp. salt
1½ tsp. pepper
1½ cups (3 sticks) butter
9 tbs. Dijon mustard
24 chicken drumsticks
Preheat oven to 350ºF. Butter 2 large baking sheets.
Combine breadcrumbs, Parmesan, parsley, onion powder, paprika, oregano, salt and pepper in large bowl. Stir to blend. Melt butter in saucepan. Remove from heat and whisk in mustard. Brush drumsticks generously with butter mixture, then roll in breadcrumb mixture, coating completely. Arrange on prepared sheets.
Bake until golden brown and cooked through, about 1 hour. Serve warm or at room temperature.
