Oven is out of order, squashes that need to be used, any good recipes that don't involve baking?

Electronics to oven controls are broke, parts not arriving until late next week. Have spagetti, buttercup, delicata squashes to use--does anyone have a good non-baking recipe for them?? Oh yes, I don't own a microwave. Thanks!

 
No, Kenmore. Only 4 yrs old, and the timer, clock, oven temp electronics

are shorting out. And it costs an arm and a leg to have it repaired (practically the cost of the @#*$&% stove!). We are ordering the parts and hopefully can replace them ourselves...

And yes, do have the stovetop, since it is not controlled by the electronics. Although w/ the shorting-out, I have taken to keeping it unplugged, so now need to light it w/ a lighter, since the burner lighters don't work w/out electricity. Maybe I will change to all wood burning......

 
Got a grill - when mine was out the other day I had squashes too....

put them on the grill - did some on sheet pan, some in casserole, and some straight on the grill.

 
Kenmore, sears product, are AWFUL, In 1969 we got a new whole kitchen from sears at a discount

because my mother worked for sears (Union, NJ) anyway, within 6 months: Refrigerator went, dishwasher went, oven malfunctioned, now remind you this was 1969. We moved in 1981, all were still not working, sears never replaced nor repaired. I would NEVER EVER NEVER EVER etc. use a sears product and anything that says kenmore

 
Butternut chicken scallopine

I apologize, I don't remember who posted this originally here, but it's really good. For some reason, it didn't come up when I did a swap search. Good luck with your oven!

Butternut Chicken Scaloppine

Yields: 4-6 servings
Ingredients:
6-8 chicken cutlets (Scaloppine style)
1 cup chicken stock
2 cups diced butternut squash
1/2 cup gorgonzola cheese
1/2 cup diced onion
1 tsp. chopped garlic
1 tbsp. butter
1 tsp. chopped rosemary
1 tbsp. dark brown sugar
2 oz. heavy cream
2 oz. white wine
Salt to taste

Directions:
Saute the onions and garlic and butter in a large saute pan over medium-low heat for 5 minutes. Add the squash and saute for an additional 2 minutes. Add the wine, chicken stock and rosemary and simmer for 20 minutes. Next, whisk in the cream, gorgonzola cheese, and brown sugar, and then simmer for another 10 minutes. The starches in the squash will cause the sauce to naturally thicken. Add salt to taste. Pound the chicken cutlets (or use pork or veal) with your meat mallet until you reach a desired thickness of 1/8-inch.Roll in a small amount of flour and quickly pan fry in either olive oil or butter. Place the cutlets on a serving platter, add the sauce and serve.
Note: This sauce can be made in advance and refrigerated for up to 3 days. When ready to use, simply heat over medium-low heat, stirring frequently, until it reaches your desired temperature

Having just gone through this ordeal, I offer you these considerations.

The electronic membrane pad that had all the displays and touch controls on my oven went out in a blaze of sparks, black smoke, and a loud pop. I paid to have it fixed which was 1/4 of the original purchase price. The new electronics lasted 2 months and went out again. I had my electricity checked (more $$$$$$$$$$$$$$$$$$$$ of course) and had the oven serviced again. I was utterly stunned when they told me that they would ask for the resplacement part to be replaced for free. In the meantime, transistors had blown as well this time. More $$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$$. My repair for service and electric work were at the 3/4 of the original value at this point.

3 months later the beast blew up again (KitchenAid, Whirlpool bought them out and has stripped all quality out to squeeze as much profits before they trash the brand--my repairman said it's about the worst in the industry and he sees many KA ovens on his rounds). I didn't even call service again. I scrapped the *$(^*@#)#%*% thing and bought a GE like I originally wanted to but let the sales person convince me how wonderful the KA oven was.

I'm certain they had a bonus structure set up on how many they sold in hind sight.

If your repair is approaching the original cost of the appliance, I would suggest you walk away from it before you have to sink any more money into it. Once the electronics start going like that, other problems develop.

Consumer reports has a matrix that guides you through the repair or replace issues for major appliances that is a big help.
