The Thai coconut curry I made and posted earlier was really good with pumpkin,
but you could use any squash and use chicken or pork or shrimp instead of the duck. Most grocery stores carry the curry paste and coconut milk.
Also, you can steam the squash even if they are large by halving or quartering, they will cook really fast that way. I had lunch today of steamed squash over a left over baked potato. Have you ever mixed in pureed squash into cooked pasta with a little cooked bacon and parmesan? yum...
Also, while this problem is ongoing may I recommend thinking about a toaster oven? My apartment's range is so inadequate, the oven takes an hour to preheat to 400! So I bought a toaster oven and use it more often than not for baking, the one I have from DeLonghi can fit in a chicken even. Love it! of course spending more money is probably not ideal right now but you might be able to pick one up from Le Target or elsewhere for a nominal cost.
