Ground Beef Biryani With Cumin Raita Recipe
This cheater version of biryani allows you to enjoy the wonderfully fragrant and complex dish on a busy weeknight. The shortcut method here gives the rice a head start in a Dutch oven, while a ground beef mixture comes together quickly in a skillet.

This was one of those recipes where I had everything. Or at least I thought I did. Homemade ghee, 1 lb pkg of frozen 20% organic beef (would someone explain that to me? organic beef?), basmati rice, onions, and lots of spices. Turns out I didn't have plain yogurt (although I do have 32 small containers of sweet yogurt...don't ask. I can't pass up a deal). I ended up using a mixture of vanilla yogurt with sour cream French onion dip and tart buttermilk, skipping the regular milk step. I also blended 1 cup of beef broth with 1 cup of "better than broth" chicken to make it a little beefier. And seasoned more aggressively since they didn't specify the salt amount. I bless music-city-missy every time I use that cooked ground beef chopper-upper masher. All in all, it took around 30 minutes to complete and now I have a dutch oven full of rice and beef. So I'm going to invoke Ukrainian grandma and make stuffed cabbage rolls with about half of this.
