Re-learning knife skills, by necessity. I now have a killer knife sharpener...

pull them aside and do a knife skills class, Joe, and teach them the importance of keeping knives

I've been using my Mac santoku for practically everything these last 4 or 5 years...

...but I broke down and ordered a Victorinox 8" chef's knife (also a CI recommendation).

I have rediscovered the joys of this workhorse.

usually a good price too for the quality. Culinary students wisely and often choose Victorinox knives.

 
Ok, how sad & weird is it I keep a chef knife in the car for when cooking at other homes.

Yes, I got tired if people (family mostly) who have dull, crappy knives -- so I have a chef knife that lives in the car so I always have it when needed if I'm cooking away from home.

 
Me too. Sure it's weird and the time you spend in lock-up for having a concealed weapon in your

vehicle is really annoying but DAMMIT, it's worth it. (Seriously, it IS worth it. I'm just sayin'.)

By the way, how many of you have used the bottom of a ceramic cup or plate to hone someone else's useless cutlery because they don't have a stone or steel? Gets some REALLY odd looks but it's way better than bludgeoning a piece of food into submission then cutting it with the edge of a spoon you sharpened on the floor of your cell . . . (hmmm, TMI?)

 
On recommendation from the knife guy at Sur la Table, I use this sharpener on all my Asian cutlery:

I have several different pieces and because the angle of the Asian edge is narrower (15 degrees instead of 25 or whatever it is on European-style) you have to be extra careful. Frankly, I don't trust myself to do it properly by eye and the tequila shooters I use to get me started don't help.

By the way, it does a FANTASTIC job and couldn't be easier to use.

I do that ceramic cup trick! also, explaining to the guards at the Base gate about knives can be fun
