above! By the way, I love cauliflower too. I have made a cauliflower pizza crust, cauliflower patties, roasted cauliflower, steamed cauliflower, mashed caulitato (fusion of cauliflower and potato) it is all delicious! I will be trying the caulirice

Oh, I see you cover your sheet pans with foil too - thought I was the only one who did that, cause hubby does dishes for me and I try to make it easy on him!

 
Sounds great! Last night I made a stovetop Mexican cauliflower rice

that turned out really well. Just sauteed some onion and garlic and finely chopped red bell pepper in a little olive oil, added the cauliflower "rice" (cauliflower pulsed in food processor til about rice size), some jalapeno, tomato, Mexican spices, chicken broth, salt and pepper, then toward the end, chopped fresh cilantro. The "mexi-cauli-rice" comes together very fast, tastes great, and leftovers slightly heated this morning then topped with a poached egg, dollop of salsa and chopped avocado made for a yummy breakfast.

Can't wait to try the roasted cauliflower rice. Thanks for sharing, Sally.

 
Sally, in the last picture where it is served along a chicken leg, did you add something

To the cauliflower to give it that curry-color?

 
Karen, was the cauliflower pizza the one the Marcella did on the Kitchen?

I know you watch that show so I'm just curious. I printed that recipe when I saw and forgot about it so if it was, what did you think?

 
Sally, do you think it would still work w/o the oil?

This sound delish, but right now I'm trying to a vegan challenge with no oils added.

 
Hummmmm... that would be a little tricky (more)

If you just roast the cauliflower i'm afraid the texture will be too dry.
However, maybe if you add a little liquid - not sure what you can and cannot eat in this challenge - then cover with foil and bake it, you might be able to get by without fat and still use this roasting technique

the foil? Could you have just used a Silpat? Or did you not want to have a pan to wash?

 
You could use Silpat.. I did not have Silpat at that time (more)

I prefer not to have to wash the baking dish, so I go against the green police and use aluminum foil.... goes into the garbage. Yes, I am awful. But we drive an electric car, so our sins are balanced out

Love roasted cauliflower, I may try it with either water or veggie broth...

Basically the challenge is: nothing with a mother, no dairy/eggs, no oil of any kind. So vegan + no oil. A whole foods, plant based eating plan.

This is the "Forks Over Knives" and "Prevent and Reverse Heart Disease" by Drs Caldwell B. Esselstyn, Jr.* and T. Colin Campbell's "China Study" way of eating.

Just leave out the oil if it is this need--I wouldn't use water

or broth or you'll have just steamed cauliflower.
With no oil or fat in your diet you'll be compromising vitamin absorption. Just a thought.
Oil is pretty vegan aside from this particular diet. ;o)
