but I confess that it so many nutritional denominations, I don't even know how to define a recipe anymore - yes, this is paleo, ooops, sorry not Paleo, it's Primal...

I don't have a Silpat either and would try it dry, on a parchment lined sheet pan

I think you may be able to get a little color with less sticking compared to using foil.

 
Yes, I've done that once... but....

the parchment doesn't cover the sides of the sheet pan, and I ended up having to scrub some nasty stuff that stuck on the sides. Maybe if I were more careful with the way I distributed the pieces... smileys/wink.gif

the advantage of the foil is that I can protect the baking sheet all the way up, and moving the cauli around as it roasts prevents it from sticking too too much

Bill Clinton is on this Reverse Heart Disease diet (Dr Caldwell Esselstyn), which also includes no nuts (which I'm trying to not eat either because of my health) but technically is not part of the E2 challenge I'm on (promoted by Dr Esselstyn's son, Rip Esselstyn and Whole Foods).

Dr. Esselstyn's program is essentially the same, but cautions people with heart disease/family history to limit/remove nuts as well.

 
Curious to know more about this idea - aside from avocados, I can't think of any

way to get the dietary fat required for health if one is following a vegan diet with no oils or nut consumption.

This would be very difficult for me to maintain for any period of time - kudos to you!

 
So far it's pretty easy actually - I was surprised and yes avocado is eaten freely

Nuts are included in the diet, but suggested as limited for those with heart health/family history (on dad's Reverse Heart Disease plan).

I linked to the Forks Over Knives documentary a few posts above. I found it very interesting even though I'd already read/heard much about this over the years.

It was just spur of the moment I decided to do the 28-day challenge. One thing for sure is making food doesn't take much time, and you can prep a lot ahead for the week.

Basically the challenge was each week, move more to plant based meals or jump in with both feet cold (not) turkey -- like I did. I've been sick so have cheated some, but I can tell I'll be eating much more plant based meals than before.

No oils of any kind....

I just bought a head of cauliflower to do something like this. I need a break from Faux-tatoes and I usually roast in the oven, so this is a perfect way to vary that routine up!

 
Made this last night. It was very good but I would use olive oil next time as the coconut oil

Taste made it seem a little fishy. Almonds are such a great pairing. I finished it with 5 min under a broiler to toast it more. It stuck a lot to the foil so next time I would use silpat or no-stick foil.

 
Interesting on the taste of the coconut oil...

... could be linked to the brand or type? I use virgin coconut oil, not processed.

but, some people really dislike it, so maybe you should stick to olive oil ;-0)
