I've never been tempted to make a turkey burger. But the picture of this one (not my picture - the one in the magazine
really tempted me because it seemed to have lots of flavor to it. I wasn't disappointed. However I found the recipe a bit too 'wet' so I cut down some of the liquid ingredients a tad and came up with this:
Turkey Burgers (adapted from Family Circle Magazine, Sept. 2010)
* 1 lb. ground turkey
* 1/4 cup panko crumbs (found in the Asian section of the grocery aisle)
* 1 egg white
* 2 Tbsp. minced scallions
* 1 clove minced garlic
* 1 Tbsp. low sodium soy sauce
* 2 Tbsp. fresh parsley, chopped
* zest and juice from 1 lemon
* 1 Tbsp. vegetable oil
1. In a large bowl, blend all ingredients except for the vegetable oil. Shape mixture into 4 even patties.
2. Spray a non-stick skillet with non-stick cooking spray and then add the oil, heating over medium heat. When the oil is very hot, add the turkey patties and cook for about 5 to 7 minutes on each side until cooked through. Serve & enjoy!
