RECIPE: REC: A really good turkey burger

I've never been tempted to make a turkey burger. But the picture of this one (not my picture - the one in the magazine:) really tempted me because it seemed to have lots of flavor to it. I wasn't disappointed. However I found the recipe a bit too 'wet' so I cut down some of the liquid ingredients a tad and came up with this:

Turkey Burgers (adapted from Family Circle Magazine, Sept. 2010)

* 1 lb. ground turkey

* 1/4 cup panko crumbs (found in the Asian section of the grocery aisle)

* 1 egg white

* 2 Tbsp. minced scallions

* 1 clove minced garlic

* 1 Tbsp. low sodium soy sauce

* 2 Tbsp. fresh parsley, chopped

* zest and juice from 1 lemon

* 1 Tbsp. vegetable oil

1. In a large bowl, blend all ingredients except for the vegetable oil. Shape mixture into 4 even patties.

2. Spray a non-stick skillet with non-stick cooking spray and then add the oil, heating over medium heat. When the oil is very hot, add the turkey patties and cook for about 5 to 7 minutes on each side until cooked through. Serve & enjoy!

Good news/Bad news. The Good News, I'm not in intensive care. Bad news, cats got at the turkey while

it was defrosting on the counter. Nothing left but the packaging. Prolly would'a been gewd though.

(Had to eat leftover poulet sauce chasseur. Even better on day 3.)
