RECIPE: Rec: Apricot Chicken - made this last night, very good, slightly sweet

2 lbs cut-up chicken (or chicken breasts)

salt and freshly ground black pepper to taste

1 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp curry powder (garam masala)

3 Tbs olive oil

2 green cardamom pods

1/4 tsp ground clove

2 cinnamon sticks

1 onion, chopped

1 garlic clove, minced

1/2" piece of ginger, grated

2 tsp coriander

2 cups dried apricots

2 cups hot water

Soak the apricots in warm water just enough to cover them for about an hour.

Add the salt, pepper, red chilly, turmeric and curry powders to the chicken pieces and keep aside.

Heat the oil in a medium saucepan. Add the cardamoms, cloves, cinnamon, and saute for a few seconds till fragrant. Add the onions and cook for about 3 minutes or till they are lightly browned.

Add the garlic and ginger and saute until the onions are rich golden brown. Add coriander and chicken pieces and fry for about 8 minutes.

Add the apricots with the water in which they were soaked. Add hot water and salt. Mix well. Bring to a boil, and cook, covered, over low heat for about 15 minutes or until chicken is done and sauce is thick.

* You can also use canned apricots, and add about half of the syrup (omitting the hot water).

 
Served new potatoes in garlic butter, potato rolls, spinach salad...

nothing out of the ordinary. Thought the chicken was "unique" enough, so I guess I subconsciously went for bland sides.

Rice would've been good, come to think of it.
