I found this recipe at Pleasures at the Pritikin table.

Since it's supposedto be very good - nutrition wise - to mix legumes and carbs, and this looks like it can be a tasty dish, I will try it as soon as we have finishede eating the curried red lentil soup with quinoa that Michael posted.

1/4 quart Black beans

1/2 quart vegetable stock

1/2 onion, chopped

1/2 red pepper

1/2 green pepper

1 leeks, white only, chopped

1/4 cup unsweetened ketchup

1/8 cup garlic, chopped

1/4 teaspoon soy sauce

1/4 cup Parmesan

1/4 teaspoon cumin

1/4 teaspoon coriander

1/4 tablespoon apple juice, concentrate

1/4 teaspoon black pepper

1/4 teaspoon Tabasco

Methods/steps

Cook beans with stock, onion, peppers, and leek.

When very soft puree, add ketchup, garlic, soy, Parmesan, cumin, coriander, apple juice, pepper, & Tabasco.

Serve hot.
