Made this tonight, with 4 lbs. of chicken thighs, that I had trimmed of excess fat.  I  marinated the chicken in the buttermilk mixture for about 30-45 minutes while I made the bread crumb coating in the food processor and heated up the oven.  The result was a really delicious baked chicken that was almost as crispy as fried chicken, with a lot of fried chicken flavor, and a crispy crust.  This is a keeper for me.
