Jocelyn uses this on about 2 lbs vegetables, mostly peppers, and then grills them...wonderful flavor. Also a good marinade on white meat.
Coconut Chili Marinade
1 cup unsweetened coconut milk
2 tablespoosn firmly packed brown sugar
1 tablespoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon dried red pepper flakes
2 teaspoons finely chopped fresh garlic
2 teaspoons chopped fresh ginger
1 teaspoon grated lemon peel
2 tablespoons lemon juice
*1 cup cream of coconut can be substituted for 1 cup unsweetened coconut
milk.
In medium bowl stir together all ingredients. Yields 1 1/4 cups.
