RECIPE: Rec: Creamed Spinach - really good!

9-oz bag fresh spinach, washed and chopped fine

2 Tbsp cup butter

3 tablespoons cream cheese, 1 1/2 ounces

1 teaspoon heavy cream

4 oz Monterey jack cheese, shredded

Salt and freshly ground black pepper to taste

Melt butter in a medium pot; add the cream cheese and stir until melted.

Add spinach and cook just until wilted. Add cream, cheese, and salt/pepper. Gently stir until the cheese melts and coats the spinach; serve at once.

Creamed Spinach

From the Bon Appetit Vegetable Book (1983)

2 slices of bacon, diced
2 Tablespoons (1/4 stick) butter
1 1/2 Tablespoons flour
1 cup half and half, scalding hot
1 lb. cooked fresh spinach, finely chopped
note:(I have used 1 package of frozen
spinach and it worked fine)
1 onion, diced and lightly sauteed in butter or
oil
1/4 teaspoon salt
1/8 teaspoon freshly grated nutmeg

Saute the bacon in a medium saucepan until crisp. Reduce heat to medium low and add butter.
When melted, whisk in flour to make a roux.
Cook 2 minutes, stirring constantly.
Slowly add hot half and half, whisking constantly until sauce is smooth and thickened.
Simmer about 10 minutes, stirring frequently. Blend in remaining ingredients and heat through.

Note: I have made this the day before and then re-heated and it is very good.
