RECIPE: REC: Ginger Beef (Crockpot)

marinade

3 tablespoons minced garlic

4 tablespoons minced ginger

2 tablespoons rice vinegar

1 tablespoon soy sauce

2 tablespoons peanut or canola oil

----

2 lbs london broil beef (or any cheap roast)

1 onion, thinly sliced

1 head napa cabbage, halved and thinly sliced

2 tablespoons sake

2 tablespoons sesame oil

1 tablespoon chinese chili paste (I use the ground up red chilies and peanuts in oil with some other spices--keeps forever in the fridge and is very handy to add a little eat to most anything)

salt, Sichuan, and black pepper to taste

Directions:

1. mix marinade and rub all over steak.

2.place in a plastic bag and marinate overnight, refrigerated.

3. add onions to crockpot, then cabbage.

4. sprinkle with sesame oil, saki, salt, pepper.

5. remove london broil from marinade and place on top.

6. cook on low for 8 hours.

7. remove steak and let it rest for 10 minutes.

8. stir cabbage and divide it among 4 plates.

9. slice steak and serve atop cabbage.

It is really wonderful coming home to this. I usually assemble this and have it ready in the crockpot the night before and put it in the fridge, then just put it on before I leave for work.

4 servings at 6 carbs per serving.
