1 c. dried apricots
1 c. macadamia nuts
1 c. whole oats
1/2 c. choc chips or choc nibs
3 dates
about 20 drops of stevia for sweetening, if you desire more sweetness
for a bit moisture you'll want some tea, or your desired liquid, such as orange juice or lime juice
In a food processor pulse the apricots a few times until they are broken up.
Add the macadamia nuts, pulse a little more until they are broken up and blended with the apricots.
Add the chocolate, dates and whole oats. Process until everything is broken down well.
Gradually add just a little moisture through the chute until it all starts sticking together.
Take small amounts of the mixture out of the processor, squeeze with your hand first, then roll into small balls.
These are delicious. Enjoy...
