I made this appetizer for a Valentine Dinner we attended Saturday night. It was a hit.

Muhammara

1 - 7 oz. jar roasted red peppers, drained

2/3 cup fine fresh bread crumbs

1/3 cup walnuts, toasted lightly (I used pecans)

2 - 4 cloves garlic

1 Tbsp. fresh lemon juice

2 tsp. pomegranate molasses*

1 tsp. ground cumin

1/2 tsp dried hot red pepper flakes

1/4 cup extra-virgin olive oil

*available at Middle Eastern markets

Blend together all ingredients well.

Make two days ahead for flavors to blend well.

Serve with toasted pita triangles, white corn chips, or "Scoops".

 
Muhammara is also great...

slathered on chicken before baking. You can't high-heat-roast the chicken, because of the pomegranate molasses, but it makes for really flavorful chicken.
