This cake is on the cover of Delicious Magazine this month and like the author of the blog I wanted to make it as soon as I saw it. WOW! It is amazing! I could not find a "thin skinned" orange so I zested my thick skinned orange, then peeled then added it to the food processor (I did not simmer it first). I also skipped the mascarpone cream just to avoid the additional fat and calories, the cake was fabulous with out it.
