RECIPE: Rec: Pink Peppercorn & Almond Biscotti with White Chocolate

I think these sound really different (for those of us who haven't used up all our pink peppercorns on the feta spread) and also very pretty. I have to try them - need to get some brandy.

2 3/4 cup flour

1 1/2 cups sugar

1/2 cup unsalted butter, cut in small pieces

1 1/2 tsp baking powder

3/4 tsp salt

1/4 cup brandy

3 tablespoons whole pink peppercorns

4 oz chopped white chocolate

1 2/3 cup almonds, toasted & coarsely chopped

Preheat oven to 350

Combine flour, sugar, butter, baking powder and salt in mixing bowl & mix until coarse crumbs form.

Beat eggs & brandy together. Add to flour mixture & stir until just combined. Add peppercorns, almonds & white chocolate. Continue to mix until dough is moistened - will still be crumbly. Divide dough into thirds, wet your hands & form into three 12X2 inch logs. Place on parchment lined baking sheet.

Bake for 30 minutes.

Place sheet on rack to cool. Then put the cookie logs on cutting board & using a serrated knife, cut into 3/4 inch slices. Reduce oven heat to 300. Place the biscotti back on sheets & bake for 15 minutes. Turn the cookies over & bake for another 10 minutes.

Makes 40 biscotti

 
I love baking but I try to do it on Sunday and then take to work since I live alone.

Seems I always either eat to much or eat a few pieces over a couple of days and end up throwing the majority out.

 
Now that's an idea & brings up something else I was thinking about to barter. When

someone didn't want to spend the money to buy a bottle of Campari. Too bad you're not supposed to ship alcohol. I'd love to share a bottle with a few people because they are so big & cost about $30. I wish they had a smaller bottle.

by the way I grew up in Woodbridge NJ and worked in Woodbridge Center in their Cheese Shop ~ wonder if they still have it ~ until 1981, my son was born in Edison and I was born in Union ~ the rest of my family were from Kings County, Brooklyn NY ~ My son and I have always been one step better (in my opinion)

Hey, I resent that - some of the best people I know were born in Brooklyn, and I'm one of them smileys/smile.gif I

lived there until I was 5, was taken out of kindergarten for the last semester to "live" in Teaneck, NJ, and absolutely hated it. I went back to NY (Manhattan) on my own when I was 20. Lived there over 25 years.

 
Yes! Bischoff's and Butterflake Bakery were the ONLY good things about Teaneck! I think they're both

still there.

 
I just looked online and Bischoff's has been around since 1934! Great memories of that place - I

never tried their chocolates, but had lots of sundaes, shakes, blizzards, ice cream cones, etc. They were delicious! I think I may have even had a sandwich or two over there.

Another place I used to go to was Victor's pizza shop and restaurant - those were the days when I ate all the meat I wanted, so I used to get their hot meatball heroes and veal parmigiano sandwiches, etc. They had great food then, about a million years ago - I wonder how it is today.
