RECIPE: REC: Seven grain pilaf - heartsmart but absolutely delicious

My parents took a 'heart smart' cooking class from a large teaching hospital in Ann Arbor and this was one of the most popular dishes. I couldn't find the exact brand of the seven grain pilaf called for - but found another brand in the organic section of my supermarket that worked just find.

About 4 times a year we have 13+ move in with us for a long weekend - and last weekend was one of those times. I made this pilaf and it was gobbled up in record time. I hope you enjoy it:)

1 package Kashi Seven Whole Grain & Sesame Pilaf

2 1/2 Cup Water

3/4 Cup Tomatoes (romas), diced

1/2 bunch Parsley, picked from the stems, coarsely chopped

1 bunch Green onions, sliced

1 Cup Water chestnuts, sliced

2/3 cup Frozen peas

Sauce

2 TBSP Canola OIl

1/4 Cup + 1 tsp. Soy Sauce

2 TBSP Wine vinegar

1 tsp Dijon mustard

Preparation

1. add water to vegetable-sprayed skillet and bring to boil

2. add Kashi Pilaf and reduce heat to slow simmer; cook until all water has been evaporated (about 20 minutes)

3. Let the pilaf cool and then add the veggies.

4. Blend sauce ingredients and add to the pilaf.

5. Refrigerate until ready to serve.

Makes about 8 cups ENJOY!!
