This was posted here by MarilynFL last year. We've just finished our third, and we can hardly wait for the next time.
We double the roasting time -- an hour per pound will produce a beautifully tender, falling-apart roast. You can use any size roast, but can keep the amount of veg/wine the same. We also prefer to use a large Le Creuset Dutch oven, with foil and lid.
