My granddaughter waits all year for strawberry season just so I will

make this cake for her..

Strawberry Cake Roll - woman's day magazine JUne 1973

1 c. sifted flour

1 tsp. double acting baking powder

1/4 tsp. salt

3 eggs

1 c. sugar

1/4 c. confectioner's sugar

1 c. sliced fresh strawberries

1 pint strawberry ice cream ,softened

1 pkg. frozen strawberries, thawed

2 tbs. brandy ( optional)

Sift flours, baking powder,salt. Beat eggs with vanilla til fluffy and light colored. Gradually beat in granulated sugar. Stir in 1/4 c.

water. Fold in sifted dry ingredients carefully but thoroughly. Turn onto waxed paper lined 15x10x1 baking pan. Bake in preheated 350 oven 15 minutes or til done. Sift confectioner's sugar onto smooth dish towel. Turn hot cake out on towel and carefully peel off paper. Roll up cake from end, jelly roll fashion, cool.

Add fresh strawberries to ice cream. Unroll cake , spread with ice cream mix, reroll, wrap in foil and freeze.

Thaw 10 minutes before serving. (I did not wait 10 minutes -watch

the cake)

I also did not do the following - have never done it - maybe I will try the next time I make it. I just served as is and nothing remains!

Here's the steps I don't do

When ready to serve, mix thawed strawberries with brandy and serve as sauce on sliced roll. Makes 8 servings.

 
elaine, thanks for posting this rec. Strawberry shortcake is my dd's favorite cake; even in the

winter! She is not a chocolate eater, so am always on a hunt for fun recipes using strawberries! I love the addition of ice cream~!
This is definitely on my list!

Sacriligious Dieting Version: Don't bother if you've already made elaines, because

while this is the same "idea"---it certainly will not meet the same taste profile.

However, if needs must...

White angel food cake mix, made with egg whites only.
Fat-Free sweetened yogurt (can be flavored)
Frozen strawberries (or raspberries)
Sugar-free strawberry jam (or raspberry jam).

Make cake mix, but bake in a jelly roll pan lined with parchment. Remove and roll in towel.
With fingers, unroll and remove any dry crust to expose the cake crumb. You want the yogurt and jam to saturate into the cake itself.

Lay out cake on large sheet of heavy-duty aluminum foil. Spread alternating 3" x 12" banners of yogurt (total of 3) and jam (total of 3) out to edge of cakey. That way both the yogurt and the jam will touch the cake surface.
Or just be lazy like me, spread the yogurt all over and then the jam
Sprinkle on fruit
Roll up long side (18") and seal in foil. Makes a 4" diameter, 18 inch cake.

You can keep this in the freezer and slice off individual pieces. Plated, add a dollop of Fat free Cool Whip and fresh strawberries.

Weight-watchers...2 points if slice is 1" thick.
Very satisfying if you've been cutting sugar and fat.
But I'm afraid it wouldn't cut the mustard on a side-by-side with Elaine's "real" version.
