RECIPE: REC: Sweet Potatoe and Gruyere Gallette. This was SO good!

I'm not a fan of the sweet potatoes, but wanted to include them on our Thanksgiving menu. So I concocted a 'sweet potatoe galette' - and I must say - it was Delish.

I used my caste iron skillet - but I'm sure it could be made in any oven proof pan. I preheated the oven to 425 F. Then using my cheapo plastic mandoline, I cut thin slices of sweet potato. I brushed the pan with melted butter, put down two layers of potatoes, sprinkled with a bit of nutmet and cinnamon, topped with a layer of grated gruyere, then two more layers of sweet potates - and brushed it w/ more melted butter. Covered the pan tightly with foil and cooked 25 minutes. Took off the foil and cooked another 20.

It was beautiful to look at (upon being flipped out of the pan) - and absolutely scrumptious.

It will definitely be on our menu next year to!
